The Seneca Oil Company: Somehow a bottle of Kier's Rock Oil
had made its way to the gaze of a New York lawyer, George
Bissell. Bissell had come in contact with a similar substance
before that had seeped out of the earth. He'd had it
investigated by a Yale professor who reported it could be used
for wax, lamp oil and lubricating oil, among other things. He
had wanted to capitalize on the previous mixture, but the area
it was from-Titusville-was a remote backwater area of
Pennsylvania. Gathering the sludge in small amounts and
transporting it long distances would be difficult. Bissell
just didn't think enough petroleum could be gathered from
seepage to make it profitable. He had already put together a
company in Connecticut that by 1858 became known as the
"Seneca Oil Company." James Townsend, one of Bissell's
partners, happened to be staying in the same hotel as a former
railroad conductor, Edwin Drake. Townsend sent Drake to
Titusville to investigate the oil seepage. Many unsuccessful
attempts by Drake to gather the oil had just about convinced
the company it was not worth it. Kier's Rock Oil changed all
that in one "aha" experience. As the story goes, roughly,
Bissell happened to see a bottle of Kier's Rock Oil and
noticed the wrapper's claim about the substance being from
"400 feet below the earth's surface." No pun intended, but a
light clicked: There was a way to bring it out of the ground
in mass quantities, someone else knew how, but they didn't

The most recent recommendations come from the National Academy
of Sciences' Institute of Medicine. These guidelines are
significantly different from those of the past, particularly
in regard to carbohydrates and fat. More fat is allowed, and
carbohydrates have a lower minimum percentage from 55
percent to 45 percent. This is due to research indicating that
people with a certain body type and metabolic profile may
benefit from fewer carbohydrates and more monounsaturated fat.
